Japanese dishes, Tofu recipes-Tofu & Spinach Shiro ae


Tofu can be transformed into many dishes. This time, I would like to show you “Shiro ae” Shiro means white and ae generally includes mixing process. Process tofu into puree can represent white. Pick seasonal ingredients and mix in. It’s very simple dish yet it contents lots of protein and fiber. Since using tofu puree, this type of dish tend to become too light or even tasteless… Not to worry! I used miso & sesame seasonings. It gives much depth in the flavor. I also pre-seasoned spinach with Katsuo bushi. Please enjoy tasteful & healthy tofu dish~!

Japanese dish, Chicken recipes-Piri-Kara Goma Miso Chicken Hot Pot


Here’s another dish used goma & miso seasoning combination. Since it’s still chilly outside, I thought, sharing another hot pot recipe would be suitable…This time I used chicken thigh. But not just throwing into pot and cook with miso soup! I have certain way of making it. Searing meat before stewing can add incredibly lots of fragrance to the soup. Because it comes with miso based soup with white sesame, it can be not just served as a hot pot, also become udon soup! Just simply add some cooked udon into the soup. You may like it much better than ramen! I also added some chili oil to make it Piri-kara, meaning spicy… You can also sprinkle some nanami powder instead!

Pasta recipes-Goma-miso Pork Shabu & Syun-giku Wafu cream Pasta


Syun-giku is one of my favorite vegetables. It’s commonly used for a hot pot. To fully enjoy this vegetable, it should be used for many more dishes. This time I decided to use it for pasta. Since It has very unique fragrance, it can be coordinated go with rather rich strong flavor sauce to balance up. I chose miso and sesame combination. It has carbonara-like texture but rather Japanese dish style. Oh,, don’t worry… If you don’t have Syun-giku available near by, you can use spinach or kale instead. You can still fully enjoy wonderful pasta!!

Japanese dish, chicken recipes-Wa-fu Goma Miso,Ume,Yuzu-Chicken Salad


If you are tired of having those chicken salads with just salt & pepper or mayo. You may want to try this! Introducing low cal Japanese chicken salad with three different flavors! Using one of my favorite seasoning combinations “sesame and miso” you can make very tasteful chicken salad. If you eat miso itself, it’s extremely salty with fermented smell. But if you combine with sesame, it covers sharp character but to create depth in flavor. This also is used when making ramen. Another flavor is Ume-boshi. It’s one of traditional pickles used plums. Though It contains very strong tanginess, it can be very useful for marinade. Mixing with mirin can neutralize the saltiness and round off the tanginess. This can be perfect for salad dressing. Uzu is a type of lemon grown in Japan. It has very rich citrus fragrance. But it can be replaced with a regular lemon. Adding lemon zest gives very nice refreshing aroma to the salad. Using these three varieties you can make hundreds of kinds of salad!
