Salmon recipes-Salmon Hamburger Steak with Wafu Kinoko Sauce


Using salmon you can make a delicious hamburger steak! Because it’s combined with tofu paste, it’s incredibly tender. Besides it has much less calories! With easy steps wafu kinoko/mushrooms sauce, you can enjoy very tasty hamburg steak!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves two ~
80g Salmon
180g Firm tofu
1 stalk green onion
1 Egg
150ml Soba tsuyu
*1/2 tsp Sugar
*optional.
120ml Water
100g Shimeji mushrooms
2 tsp Potato starch or cornstarch
2 tsp Water
2 tsp Chopped green onion
1/2 tsp White sesame
4 leaves Iceberg lettuce
1 Tomato

[ Directions ]

1. Press tofu for about 30 minutes or longer to allow it to drain excess water.

If tofu contents too much water, it gets soggy and hard to form into Hamberger shape.

2. This time, I used sockeye salmon.

You can use any type of salmon. Using white meat fish is also fine.

3. Chop it into paste and put into a bowl.

To speed up the process, you can use a food processor instead.

4. Crushing the tofu with paper towel or cheesecloth can squeeze out more water effectively.

5. Mash the tofu with a hand or strainer and put into the bowl.

6. Add chopped green onion, salt, and egg, mix well.

7. You can divide into six or four portions.

8. Shape each mixture into patty.

9. Heat up a fry pan on medium heat, add 1/2 teaspoon of vegetable oil. Gently place the patties and fry both side until golden.

10. Add about 2 tablespoons of sake so it can create steaming effect.

11. If the center gets springy, you can shut off the heat. Keep it warm.

12. Chop shimeji or shitake mushrooms.

13. Pour soba tsuyu and water and start cooking on medium heat.

14. Add the chopped shimeji mushrooms and simmer it for 2~3minutes.

15. If you like it sweet, you can add sugar.

16. Combine potato or cornstarch and water. 
Shut off the stove, add the starch water and mix well.

If the sauce is boiling hot, it coagulates too quick and becomes lumpy.

17. After making sure all the starch water is well blended, turn on the stove.
Keep heating until it shows consistency.
Place the salmon burger with some lettuce and tomato and sauce the wafu mushroom sauce.
