Sandwich recipes, Breakfast-Kabocha Croissant Sandwich

 Kabocha can be cooked not just as Japanese dishes it can also turn into variety of styles. Since it contents lots of nutritious, it’s very suitable to serve as a healthy & easy breakfast. This time, to make healthy salad, I used yogurt and mayo for seasonings. Mixing with prawns’ protein and nuts’ minerals can also give you well balanced food!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ makes four ~
400g Kabocha
12 Prawns, peeled
2 tbs Walnuts
100g Yogurt
1 tbs Mayonnaise
1/2 tbs Honey
Salt & Black pepper to taste
4 Croissant
4 leaves Lettuce
[ Directions ]

1. Spoon out the seeds.

You can use any type of squash. Butternut is also suitable!

2. Peel the skin..

Kabocha has very hard shell. If you have trouble peeling, you can microwave the whole piece for half minute or so. Shell will become soft and easier to peel!

3. Cut into small pieces.

4. Put into a steamer or microwave and cook.

5. To find out if it’s ready, you can simply poke with a chopstick!

6. Transfer the kabocha into a bowl. Lightly mash them.

Do NOT over mash them! It will become sticky. Leaving some chunks will give much better texture.

7. Blanch peeled prawns.

8. Roast walnuts until golden.

9. Add the prawns and walnuts into the kabocha.

10. Add Yogurt, Mayonnaise, Honey, Salt and Black pepper to taste.

You can add some raisins as well if you like!

11. Lightly toss the ingredients. Now you have delicious and healthy Kabocha salad! You can directly serve it on a plate!

12. This time I used croissant to make sandwiches! Cut in the middle so it has some space for fillings.

13. Lay a leaf of lettuce and put Kabocha salad!

You can go with a glass of milk or coffee.  Let’s have a tasteful and healthy morning~!(˃̵ᴗ˂̵)و
