Bento recipes, Pork recipes, Japanese dish-Tonkatsu Onigrirazu /Rice Sandwich


Tonkatsu can be also become a great filling for onigiri. This time I would like to share another style of onigiri called “Onigirazu” I have shared this food before.(please check the link here) Using this method, you can have much more filling in your onigiri. Not to mention a large piece of Tonkatsu can be also filled in! It’s very handy so you can take it with you anywhere you go!!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ makes two ~
2 slices Pork loin
salt & black pepper to taste
2 tbs All purpose flour
1 Egg
1/2 cup Breadcrumbs
2 leaves Cabbage
1 tbs Tonkatsu sauce
*steak sauce can be substituted such as HP, AI
240g Steamed rice
2 sheets Nori

 

[ Directions ]

1. Cut tendon around the meat.

If you don’t cut tendon, it curls in when cooked. It becomes hard to fill in your onigiri.

2. Pound the surface with a tenderizer.

3. Sprinkle salt & black pepper

4. Dredge the meat with all purpose flour.

Using a skewer or fork can prevent getting your hands messy!

5. Tap the surface to remove the excess flour.

6. Place the meat into egg wash. Make sure to cover the whole piece.

7. Transfer into breadcrumbs.

8. Press gently, allow breadcrumbs to stick on the surface.

9. Add enough vegetable oil in a frypan so it has about 1cm depth.
Deep fry one side on medium low heat until golden.

10. Flip and keep frying until golden.

11. Place on a rack, allow the excess oil to drain.

12. Shred cabbage.

13. Put a sheet of Nori on plastic wrap. Place steamed rice in the center of the nori.

14. Put the shredded cabbage on the rice.

15. Drizzle some tonkatsu sauce.

You can use steak sauce such as AI or HP instead.

16. Cut tonkatsu into the size that can fit in the onigiri.

17. Place tonkatsu on cabbage and drizzle some sauce.

18. Put thin layer of steamed rice to cover the pork.

19. Fold in every corner of nori along with plastic wrap.

20. Flip the sandwich and press gently to allow the rice spread evenly.

21. After letting the nori become moist, you can cut into half with plastic wrap on.


This can be a perfect meal to pack into your bento box~!(˃̵ᴗ˂̵)و
