Here’s healthy warm Bento combination. Usually, instead of deep frying croquettes, using baking method can make cut down oil. Because the breadcrumbs are roasted golden brown, it’s just as crispy as being deep fried. Tofu based white sauce is very easy to make. It turns into silky smooth sauce. Classic style ketchup fried rice can be also turn into more complex flavor by adding tabasco and soy sauce. This bento can be served at room temperature or warm. Whether you microwave or throw into low temp oven to warm up. Please enjoy tasteful bento~!(๑˃̵ᴗ˂̵)و

『Oven Baked Beef Croquettes』

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves four ~
2 Potatoes
200g Ground beef
2 Boiled eggs
1/2 Onion
Salt & black pepper to taste
1 Egg
50g All purpose flour
60g Breadcrumbs
1 tbs Olive oil

[ Directions ]

1. Cook potato until soft.

You can either boil or bake. For the best result, You bake it with skin on. But it’ll take much longer to cook though…

2. Chop onion.

3. Heat a frypan, add a teaspoon of vegetable oil. Add the chopped onion, stir fry until translucent on medium heat.

4. Move the onion to the side, add ground beef. Spread beef evenly. Sprinkle salt & black pepper.

5. Sear the beef evenly.

6. And then mix with the onion. Shut off the stove, put aside.

7. Transfer the cooked potato into a bowl.

8. Mash it.

You don’t need to mash too fine. Leaving some chunks gives much better texture!

9. To give another texture flavor, you can add a boiled egg!

10. Use a masher to blend in.

11. Add cooked beef and onion(step6).

12. Add salt & black pepper to taste.

14. Add olive oil into breadcrumbs.

To add more color or fragrance, you can add chopped herbs such as parsley, thyme, oregano.

This time I’m making baked croquette. Before coating the potato filling, you can lightly roast it. This way bread can stay nice and crispy!

16. Roast it over medium heat until golden brown.

17. Divide the potato filling into 6 or 8portions.

18. Form each portion into an oval shape.

19. Coat with all purpose flour.

Having too thick coating can result tough texture, make sure to shake off the excess flour.

20. Evenly cover with an egg wash.

21. Transfer into the roasted breadcrumbs. Cover the surface by gentle pressing.

22. Now you have beef croquettes ready!

23. This time I only used four pieces for my bento.

24. You can put extras into a ziplock. It can be stored for about 2~3 weeks.

You can directly put into low temperature(150℃) heated oven without thawing.

25. Place into preheated oven (200℃) bake for 2~3minutes or until the breadcrumbs sets.

The filling is already cooked, just bake long enough to let the egg wash gets cooked.

『Healthy Tofu Gratin』

~ serves two ~
8 Peeled prawns
2 tbs Canned corn
1 stalk Broccoli
150g Tofu,soft
80~90ml Milk
1~2 tbs Heavy cream
Salt & black pepper to taste
60g Mozzarella & Cheddar cheese, shredded

26. Press tofu with paper towel to dehydrate the excess water.

27. Crush into paste by either hand or food processor.

How you make it into paste is up to you. If you like creamy silky texture, a food processor is the one you should go with.

28. Add milk and heavy cream.

29. Mix well.

30. Add salt & black pepper to taste.
Now you have super easy tofu white sauce ready!!

31. Blanch broccoli.

Broccoli can absorb lots of water. To avoid let your dish become soggy, don’t put into iced water to cool off, just put on paper towel to absorb excess water while cooling.

32. Boil your favorite seafood…

Seafood mix can be also used!

33. Place the broccoli, seafood and corn into baking sheet lined oven safe dish or silicon cup.

34. Cover with tofu white sauce!

35. Sprinkle shredded cheese.

36. Put into a preheated oven(200℃) bake for about 3~4 minutes or golden brown.

37. If you have unused tofu left, you can put into a plastic bag filled with water. This way tofu can stay moist. It can be stored 2~3days in the fridge.


Using this tofu white sauce, you can make many baking dishes. Adding some short pasta would be also a great idea!(˃̵ᴗ˂̵)و

 

『Bacon & Cabbage Neapolitan Fried rice』

~ serves two ~
250g Steamed rice
100g Cabbage
3 slices Bacon
2 tbs Ketchup
1/2 tsp Soy sauce
1/2 tsp Tabasco
Salt & black pepper to taste
1/2 tsp Parsley, chopped

38. Cut cabbage into small pieces.

39. Chop bacon.

40. Heat up a frypan, add 1/2 teaspoon of vegetable oil. Add the chopped bacon, stir fry until golden.

41. Add cabbage.

42. Stir fry until cabbage gets soft.

43. Add steamed rice.

You can use either hot or cold rice.

44. Add ketchup and soy sauce.

45. To give a kick to the flavor, you can add some tabasco!!

46. Lastly, sprinkle salt and black pepper to adjust the flavor.


You can also make this into Omelet rice by covering with egg sheet! (˃̵ᴗ˂̵)و


*To avoid become stale by your lunchtime, make sure to cool off before packing.
