Potato recipe-Prawn & Avocado Hot Potato Salad

Potato salad doesn’t always have to be served as a cold dish. This time I made oven baked potato salad with lots of avocado. As many people know, avocado contents lots of nutritious. It’s categorized as one of the super food! I love avocado’s creamy & smooth texture. It goes very well with starchy food such as potato.

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves one ~
1 Avocado
1/2 tsp Lemon juice
1 Potato
5 Prawns
3 tbs Yogurt
2 tsp Mayonnaise
Salt & Black pepper to taste
3 stalks Thyme
1 tbs Breadcrumbs
1 tsp E.V. Olive oil
1/4 tsp chopped parsley
[ Directions ]

1. Slice a peeled potato. Soak in water to wash off the starch.

2. Put into a steamer, cook until soft.

You can either steam or boil or even bake it. Whichever you prefer!

3. Remove the veins from prawns.

4. Sprinkle salt & black pepper.

5. Add half teaspoon of olive oil in a heated frypan. Add prawns, sauté until both sides turn golden.

Cook on a frypan can concentrate much more flavor than boiling in water!

6. Add about one teaspoon of white wine and then shut off the stove.

White wine is to add some fragrance to the prawns. You don’t need to cook too long..

7. Transfer the cooked potato into heat tempered bowl.

8. Smash the potato with a spatula or musher.

You don’t need to make it too fine. Leaving some chunks will give better texture.

9. Add the sautéed prawns.

10. Cut avocado into small pieces.

11. Put into the bowl.

12. Add Mayonnaise and yogurt.

13. This time I used thyme. It goes very well with prawns and avocado!

you can also use dry mixed herbs.

14. Add salt & black pepper to taste.

15. Toss them, allow the seasonings get spread evenly.

This is already completed dish. You can serve it as a potato salad!

16. But this time, I would like to serve this as an oven baked dish. Add the potato salad into a casserole.

17. Mix breadcrumb, olive oil and chopped parsley together.

18. Sprinkle mixed breadcrumb on the potato.

19. Put into an oven, broil it until golden brown on the surface.

This can be a perfect hot potato salad in wintertime!(˃̵ᴗ˂̵)و
