Mushrooms recipes, Curry recipes-Kinoko Curry Rice Gratin

I like making curry flavored dishes. Not just ordinary Japanese style curry rice, but Curry Yaki Udon, Curry Kbocha Nimono, Curry Niku jyaga and so on… This time, I decided to use lots of seasonal vegetables such as Kinoko/mushrooms and to make very tasteful curry rice gratin. This method doesn’t require much of simmering time like other stewed style curry. If you have left over steamed rice, you can make this dish with one single fry pan within 15minutes! I believe it’s turning more autumn like weather in certain area such as North America. Why not make nice and warm a fry pan dish!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves two ~
100g Enoki mushrooms
100g White shimeji mushrooms
3 Shitake mushrooms
1/8 Onion
5~6 Snap peas, blanched
1 tsp Butter
20g Curry cube
*it’s available at Japanese or Chinese grocery store.
1/2 tsp Soy sauce
50ml Milk
200ml Water
250g Steamed rice
100g Shredded cheese

[ Directions ]

1. If your enoki mushrooms come in a package like the picture shown, don’t remove the package. 
You can directly trim the roots off with package on.

2. This way, you can avoid messing up your cutting board with dirt!

3. Discard the roots. Remove the package, cut into 2~3cm length.

4. Trim the roots off the white shimeji mushrooms and take stalks apart by hands.

5. Slice shitake mushrooms after trimming the roots off.

6. Slice onion.

7. Add butter into a pan, heat over medium heat. Add the sliced onion when the butter melts. Stir fry until translucent.

8. Add the mushrooms in the pan.

9. Cook until light golden brown.

(•̀ㅂ•́)وDon’t need to stir it too much. Allow mushrooms to sear over the heat.


10. Pour in water or stock if you have some..

11. This is Japanese curry cube. It comes in a chocolate-like package. It has concentrated curry flavor. To let it dissolve quickly, slice before adding into the pan.

(•̀ㅂ•́)وYou can use curry powder instead. But it doesn’t give consistency…If you like to have some thickness, you can sprinkle in some flour while stir frying onion.


12. Add the curry cube.

13. Stir it well. Make sure the cube dissolves thoroughly.

14. Add soy sauce and milk and stir well.

(•̀ㅂ•́)وThough curry cube contents seasonings, adding touch of soy sauce can give another layer of umami flavor!


15. Add steamed rice, mix well.

16. Sprinkle shredded cheese and place some blanched snap peas.

17. Cover the pan, cook for a few minutes or the cheese melts.
