Bento recipes, chicken recipe-Tomato Nikomi Chicken Bento

Tomato pasta sauce can be very versatile. Since it’s ready to eat, it doesn’t require much of cooking process not to mention seasonings as well. This time, I’m taking full advantages of this convince to make easy tasteful stewed chicken! To give more depth to the flavor, you can use a hint of umami seasoning such as miso or soy sauce. It’s very suitable to pack in your Bento box!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves one ~
200g Tomato sauce
50ml Water
1 skin on boneless chicken thigh
Salt to taste
*1/2 tsp Miso or soy sauce
*1/2 tsp Sugar
50g Shimeji mushrooms
1/2 yellow bell pepper
5-6 stalks asparagus
1/4 Onion

[ Directions ]

1. First off, blanch asparagus.

(•̀ㅂ•́)وTo maintain bright green, green vegetables should be cooked separately.


2. Trim off shimeji mushrooms root and take each stem apart.

3. Cut yellow bell pepper into small pieces.

4. Slice onion.

5. Sprinkle salt on both sides of chicken thigh.

6. Place the chicken with skin side facing down on a heated pan.

7. Sear the skin until golden brown on medium heat.

8. Remove from the pan.

(•̀ㅂ•́)وThe chicken will be back on heat on later steps.


9. Just a little amount of chicken oil is sufficient. You can wipe out the excess oil with paper towel.

10. Add sliced onion, keep stir frying until translucent on medium heat.

11. Add shimeji mushrooms, keep frying until golden brown.

12. Add yellow bell pepper, fry for another minute or so.

13. Now you can add your favorite commercial brand tomato sauce!

14. Cut half-way cooked chicken into small pieces.

15. Put them back into the pan.

(•̀ㅂ•́)وCooking chicken on two separate steps can give nice seared skin fragrance without overcooking which makes meat tough.


16. Add water mix well.

17. Since the tomato sauce is already seasoned, there’s no need to add too much other seasonings. You can add a hint of soy sauce or miso to umami flavor. If you find too much acidity, you can also add touch of sugar to neutralize!

18. Lastly add blanched green vegetables, stir it. Now your meal is ready!
