Chicken Recipes-Grilled Chicken Curry Spring Rolls


Spring rolls don’t need to be always served in such a traditional way. It can be arranged in many ways. It’s just like tortilla, you can wrap whatever that comes in your mind. This time I made rather South Asian style curry using fish sauce and use spring roll to wrap in. To avoid high calories intake, I used a grill pan instead of deep frying. The result is just as good as I expected! If you don’t have spring roll sheet handy, you CAN use tortilla instead. Let’s have tasteful & healthy curry spring roll~!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ makes two ~
1 Chicken thigh
2 Spring Roll sheets
or Tortilla
1/4 Onion
1~2 cloves Garlic
5 Mini tomatoes
6 stalks Asparagus
2 tbs Curry powder
1 tsp Fish sauce
2 tbs Heavy cream
3 tbs Milk
Salt & Black pepper to taste
2 tsp Flour
2 tsp Water

[ Directions ]

1-
1. Peel the bottom part of asparagus to remove fibery texture.

2. Cut into short pieces.

3. Slice onion.

4. Cut mini tomato into 1/4.

5. Chop garlic.

6. Cut chicken thigh into strips.

7. Heat up a fry pan, add some olive oil. Add the sliced onion, stir-fry until translucent on medium heat.

8. Add the chicken strips, keep stir-frying.

9. Add some salt & black pepper.

10. Sprinkle in curry powder.

(•̀ㅂ•́)وOnce curry powder is in, it burns easily. Make sure to keep your eyes on the pan or reduce the heat.

11. Add fish sauce, heavy cream and milk.

(•̀ㅂ•́)وYou can use soy sauce instead of fish sauce.

12. Let it simmer for a few minutes or chicken in thoroughly cooked.

13. Add the asparagus and mini tomatoes.

14. Cook for about one minute and shut off the stove.

15. Prepare flour mixture. Combine water and flour, mix well.

16. Now we can start wrapping! This time, I’m using spring roll sheets. Place about half amount of step 14. in the center.

(•̀ㅂ•́)وYou can use tortilla sheet instead. How much you add is depending the size of your wrapping sheet. If it’s small, add less filling.

17. Fold in from the bottom so the filling can be covered.

18. Fold one side..

19. And the other side..

20. Spread flour mixture on the margin with a brush.

21. Roll forward..

22. Now you have curry chicken spring roll! Do the same to the remaining filling.
To let the sheet to stick together well, let it sit for about 10~15minutes.

23. Heat up a grill pan, spray or brush some oil.

24. Place the rolls on the pan. Cook until grill patterns show on medium heat.

(•̀ㅂ•́)وThe filling is already cooked. This process is to only give nice crispy texture on the sheet.

25. Cook the other side until golden brown. Now you have tasteful curry spring roll!!
