Rice recipes, Seafood recipes-Zousui Style Super Easy Clam Risotto


Zousui is usually served when a hot pot has nothing left but the soup. After enjoying lots of ingredients cooked in a hot pot, there are so much concentrated flavor left in the soup. To fully enjoy the very last drop of soup, we usually add some steamed rice and cook. It’s a bit similar to Chinese Congee. But we don’t cook that long. Add some steamed rice and beaten egg into the soup, bring it to a boil and then serve. The rice has absorbed so much flavor. Even your stomach is already full with hot pot, you can still easily finish one bowl! This time I’m not making a hot pot, but applying this idea to one of the famous rice dishes called “Risotto”. Cooking raw rice with fry pan is a little time consuming. You have to constantly add soup and stir until the rice turns into al dente. But if you switch this with steamed rice, you can save up lots of time. Since the heating process has been minimized, the rice texture is as good as the one served in Italian restaurants!!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves one ~
300g Clams
1/2 stalk Broccoli
1/8 Onion
2 cloves Garlic
2 cloves Shallot
10g Carrot
50ml Sake
*200ml Milk
*50ml Heavy cream
*You can adjust the ratio to your preference
150g Steamed rice
2~3 tbs Parmesan cheese

[ Directions ]

1-
Put clams in salted water so the sand caught in the shells can be removed. Let it sit for a few hours or at least 30 minutes.

2. Cut broccoli into small pieces and blanch.

3. After blanching, place them in a strainer to cool off.

(•̀ㅂ•́)وBroccoli contents lots of buds, to avoid letting it absorb too much water, make sure not to soak in while cooling off.

4. After cooling, finely chop them.

(•̀ㅂ•́)وQ. May I directly add fresh broccoli into the pan and cook?
A. Yes, you may. But broccoli has some bitterness. It’ll give much better result if you parboil them.

5. Chop carrot.

6. Chop all the rest of the vegetables including, onion, shallots, garlic.

(•̀ㅂ•́)وYou can switch vegetables with whatever you like. Spinach, asparagus are all suitable!

7. Add some butter into a fry pan and turn on the stove. Let it melt on medium heat.

8. After letting the butter melt, you can add all the chopped vegetables except for the broccoli.

(•̀ㅂ•́)وBroccoli can lose its bright green if cooked too long. You can add it when you are finishing up.

9. Stir fry until aromatic.

10. Add sand removed and washed clams.

11. Add Sake or white wine.

12. Cover the pot and wait until the shells pop open.

13. It’ll start popping in a few minutes!

14. You can start picking up ones already opened. After removing all the clams, shut off the stove.

(•̀ㅂ•́)وTo maintain juice and tenderness of the meat, try not to cook too long.

15. You can use half shel to scrape off the meat.

16. You can save some shell-on clam meat for decoration.

17. Pour in milk..

18. And heavy cream.

19. Now you can add “steamed” rice! Mix well make sure to let the rice spread evenly without any chunks.

(•̀ㅂ•́)وYou can use the leftover rice from a night before if you have some. It can be either cold or warm steamed rice.
Since using cooked rice, it absorbs liquid very quickly. As soon as the rice has been added, try finishing up the process so the rice won’t get too mushy…

20. Add chopped broccoli.

21. The clams can be added at this point.

22. Sprinkle some parmesan cheese and check the flavor.

23. Adjust the flavor by adding touch of salt and black pepper.
As you serve, you can drizzle some extra virgin olive oil for an extra fragrance!

(•̀ㅂ•́)وThe liquid will be absorbed while cooking. You can add some more milk or water or stock to adjust the thickness!
