Dessert recipes-Ume Shu Jelly


Ume shu also known as plum sake. It is now available all around the world. It’s rather sweet alcohol. As the name explains, it has fruity plum fragrance. It’s bit similar to ice wine. Since it has much concentrated flavor, I usually have it on the rocks or go with soda. This time, I would like to show you how to transfer this beverage into jelly! To set this liquid, I used kanten, better known as agar agar. You can enjoy tender yet light crispiness in this jelly texture. It can be served as the picture shown or serving in martini glasses would be also very entertaining!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ Makes 15x15cm ~
200ml Plum sake/Ume shu
*ice wine can be substituted.
1 tsp Agar agar
400ml Water
1 tbs Sugar
1 tbs Honey
9 Pickled plums
[ Directions ]

1. Add measured water and sugar into a pot.

2. You can also add honey to give more depth to the sweetness.

3. Add agar agar or kanten

(•̀ㅂ•́)وKanten is one of the substance can be extracted from sea kelp. It can coagulate liquid after being heated. You CAN use gelatin. But, since it has weaker coagulation, you may need to double the amount.

4. Let it boil and keep stirring for 1~1.5minutes. Make sure agar agar is all completely dissolved.

(•̀ㅂ•́)وUnlike gelatin, it needs to be cooked at high temperature for a few minutes to let the coagulation come into effect.

5. Now you can shut off the stove. Pour in Ume shu. Stir well.

(•̀ㅂ•́)وAfter adding alcohol, DO NOT reheat! Heating with alcohol can weaken kanten. It may not set firm enough…
If you want to dealcoholize, you can let it boil before hand, and then add in to a kanten dissolved liquid.

6. Kanten can start setting at room temperature. You need to transfer it into the mold as soon as removing from the heat.

(•̀ㅂ•́)وTo remove the jelly from the mold easily, you can line the mold with plastic film.

7. If you don’t have suitable mold, you can use milk container! Cut off on side, and wash it well, it has nice rectangular shape!
Or directly pour into Martini glasses would be also very entertaining!

8. Place pickled plums that usually come inside the Ume shu bottle.
Gently place in the fridge. Let it set for 1~2hours.

(•̀ㅂ•́)وIf you don’t have plums, you can add other fruits. Canned peach, cherry are all suitable. Just avoid using high acidic fruit such as pineapple or kiwi.
