Bento recipe-Kiri tanpo Style Omelet Rice


There’s one  local cuisine called “きりたんぽ/Kiritanpo” It’s originally from Akita prefecture. Stick some steamed rice around chop sticks and form into cylinder shape and bake them. I have actually shared this recipe before. This time, I would like to arrange this unique dish into more familiar style for these days! Using ketchup flavored rice instead of just plain rice and coating with cheese & egg mixture. It can turn into a cute dish rather than traditional dish! You can wrap it with fancy printed parchment paper and take them with you for bento~♪

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves two ~
160g Steamed rice
1tbs Ketchup
2 eggs
3tbs Parmesan cheese
1/2 stalk broccoli
1/4 carrot
4-5 baby corn
[ Directions ]

1. Add ketchup into steamed rice.

(•̀ㅂ•́)وYou can adjust the amount ketchup depending on your preference.
Adding soy sauce would be also a good idea.

2. Add salt and black pepper.

3. Mix well. Check the flavor, see if it needs any adjustments..

4. Put half portion(80g) of the rice into a plastic bag.

5. Lightly squeeze the bag so the rice can stick together.

6. And then start forming into cylinder shape.

7. Make sure the rice lying on the side part of the bag, not the bottom.

8. Insert a chop stick into the rice.

9. Let the rice cover the chop stick.

10. Push the rice against the side of the bag to secure the shape.

11. Now you have a rice stick! Remove from the bag.

12. Do the same process to the other half of rice.

13. Prepare egg wash. Make sure to break the egg whites completely.

14. Add Parmesan cheese and mix well.

15. Dip the rice stick into egg mixture. After covering entirely let the excess drip off.

16. Heat up a non stick fry pan on low heat. Apply thin layer of oil with a spray or brush.
Place the rice stick.

(•̀ㅂ•́)وTo make nice yellow egg color, keep your pan at low temperature.

17. Slowly rotate the sticks as you are pan frying. Make sure the whole stick is making full contact to the pan.

(•̀ㅂ•́)وBecause the egg mixture is very runny, it may result bumpy surface. That’s OK! I’ll smooth out as you add more egg layers.

18. Put the rice sticks back into egg mixture, dip evenly.

19. Put back on the fry pan keep cooking. You can hold the sticks up right so the tips can also be cooked.

20. Repeat the process util use up all the mixture.

21. As you dip and pan fry, the yellow layer will get thicker. Will look more like corn dong!

(•̀ㅂ•́)وIf you think maintaining round shape is too hard, you can make Onigiri shape(triangle) without sticking on chop sticks. Otherwise, combine rice and egg mixture and cook it like pan cakes!

22. How can you wrap them? You can use one of those “kawai” printed baking sheets!

23. Wrap them like candies.

24. You can fill ketchup into a small squeeze bottle.

25. To add more nutritious, you can wrap some steamed vegetables.
