Dessert recipe-Blueberry&Raspberry sauce


Here’s very easy and delicious fruits sauce! If you happen to have extra fruits, this is what you must make!!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
[ Blueberry sauce ]
500g Blueberries
*80g Sugar
*15~20% of fruit, depending on sweetness of the individual fruits
15~20ml Lemon juice
[ Raspberry sauce ]
200g Raspberries
35g Sugar
1 stalk Rosemary

[ Directions ]

1. Wash blueberries and put into a pot.

You can also use frozen blueberries. You can directly put into a pot without thawing.

2. Squeeze lemon.

Adding lemon is not just to give citrus fragrance, but to let pectin activate so the sauce can have consistency.

3. Add sugar into the pot.

The amount of sugar should be about 15~20% of the whole weight of the fruits you are using.

4. Add lemon juice.

5. Mix well and leave it for 30 minutes or longer. Let the fruit dehydrate.

You can prepare this a night before. Put them all in a bowl and store in the fridge.

6. After leaving for a while, you can turn on the stove. Cook on low heat.

Blueberries will come out with their own juice. There’s no need to add any water..

7. I like it little bit mashed, so I used potato masher.

How you like your sauce is up to you. Leaving chunk of the fruit is also ok!

8. Simmer it for 5~6 minutes.

9. Transfer into a container with iced water underneath. Rest it until cooled off.

This sauce is very useful. You can use it for many kinds of dessert. adding into mousse, spread on sponge cake, serve with crepe and so on.. you can store in sterilized jar or put into ziplock and freeze it.

10. Here’ s another fruits. They are fresh raspberry! Wash them under running water.

11. Put berries into a pot and add sugar.

12. Leave it until dehydrates.

This type of berries are very sour. Lemon juice may not be needed unless you want super sour sauce…

13. Cook on medium heat until juice comes out and bubbling.

14. You can add rosemary, simmer it on low heat for 3 minutes or so.

Adding rosemary can ease up berry’s tanginess!

15. After simmering, transfer and cool off.

16. Here we have two kinds of fruit sauce. The best way to enjoy would be simply serve with yogurt or pancake!
