Beef recipe-Wa-fu Onion Sauced Beef Steak


How would you like to have your steak done? Do you have trouble controlling heat? Got lovely piece of meat but wasn’t so sure how it’s cooked inside and end up overcooked or undercooked? Making a perfect steak might need little bit of practice. there are some techniques you can find on Internet. But still sometimes gives you unwanted result. The most common problem we run into is that it’s a bit over cooked on the edge and under cooked in the center. Because most of the steak contents fat and tendons. And this can cause uneven cooking result. This time I would like to show you one of the easiest ways to solve the problem! There is a steak called Sai Koro steak in Japan. Sai Koro means dice. As you can easily Imagine, this steak comes in cubic shape. Because it comes in one bite size, you can easily observe how each piece is being cooked. Also you don’t have to bother using a knife while enjoying your steak. You can even use chopsticks being more like a Japanese style! Now that I mentioned Japanese, I would like to introduce delicious Wafu onion sauce. It’s very easy to make and can be also used for many dishes. Now,,,let’s see how you can make a perfect sizzling juicy tasteful beef steak!!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves two ~
2 slices Boneless Beef rib,keep at room temperature one hour before cooking.
1/2 stalk Broccoli
1/2 Carrot
100g White shimeji mushrooms
[ Wa-fu Onion Sauce ]
1/2 Onion
2~3 cloves Garlic
3 tbs Sake
3 tbs Mirin
3 tbs Soy sauce
50ml Water

[ Directions ]

1-
1. Cut onion into small pieces.

2. Put into a blender.

3. Add 2~3 cloves of garlic.

You can also add ginger&carrot to give more layers of flavor.

4. Add all the seasonings including water and turn on the blender.

5. Run it until fine.

It’ll get foamy. It’s OK. It’ll disappear and turn dark brown when cooked.

6. Transfer into a pot.

7. After binging it to a boil, turn to low heat and keep simmering for at least 30 minutes.

8. Since it contents soy sauce and sugar from mirin, it’ll easily burn stick. Make sure to scrape off the sauce that’s stuck on the side of the pot one in a while.

9. The longer it’s cooked, the more sweetness comes out from the onion. If you have time, you can cook longer. You can add some water if it has not enough liquid to cook on.

10. It should turn into glassy dark brown texture. Now you have Wa-fu Onion sauce!

This sauce is very versatile. You can not only drizzle on your beef steak, but to go with any kind of meat! Mixing with vinegar and vegetable oil can transform into Wa-fu salad dressing!

11. Adding some butter can give more richness to the sauce.

12. Let’s prepare garnish first! Parboil sliced carrot.

13. When the carrot is about ready, you can also blanch broccoli.

14. Trim off the root from white shimeji mushrooms.

15. Here’s my steak! This time, I used boneless beef ribs.

You can use any part of beef. Sirloin, Fillet, whatever you like!

17. Trim off the tendons.

You don’t need to cut into a real dice size! About one bite size will be suitable for this dish.

19. Melt some butter in a fry pan over medium heat. Add shimeji mushrooms, sauté until light golden brown.

20. Add parboiled carrot and broccoli.

21. Season with salt & black pepper.

22. This time I decided to use a cast iron as a serving plate. Place on the stove and heat up, brush the surface with some oil.

You can of course serve with a ceramic plate. But to fully enjoy the steak, plate should be warmed up before decorating. You can place an empty plate in low heated oven beforehand.

23. Decorate the garnish on heated plate.

24. Now you can start cooking meat! Drizzle some oil on a heated pan.

25. Sprinkle salt and black pepper just before placing in the pan.

Salt can dehydrate meat. Make sure you already have a fry pan ready to cook.

26. Rub the surface so the seasoning can stick on the meat.

27. Make sure your fry pan is nearly smoking hot.
Place the meat, sear the surface.

28. You don’t need to sear all six dimensions. Since they are so small, cooking two phases will give just enough heat distribution to the meat.

29. Adding some butter can give nice buttery aroma to the meat.

30. As soon as you are done with both sides searing, transfer to the heated pan.
Lastly, drizzle your onion sauce!! Enjoy delicious SA I KO RO Steak!!
