Dessert recipes, Baking recipes-Easy-Steps! Strawberry Custard Pie


I’ve been here in Taiwan for a while. I found out that It has slight difference in the season for certain types of fruits. Strawberry season starts earlier and ends earlier than the way it is in Japan. In December, there are lots of places already starting to sell strawberries. Unlike in Japan, as it’s getting close to the end of March, strawberry season is almost over. So around this time, I always get urge to buy many boxes of strawberries. And end up making lots of desserts. This time I found very useful recipe that doesn’t require any mold to make pie. Many people hesitate to make pie just because you have to dust your working place with flour and roll pie sheet. The trickiest part would be fitting pie sheet into a mold. Using the method that I’m showing this time, you can make many kinds of pie so easily! Let me use those strawberries sitting in my kitchen and demonstrate kawaii&delicious fruit pie!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ Pate sucre~
120g Butter
50g Icing sugar
1 Egg
200g Cake flour
2g Salt
~ makes two 16cm round pie ~
320g Pate sucre
3 Yolk
60g Sugar
25g Corn starch
300ml Milk
12 Strawberries
some sprinkle of icing sugar

[ Directions ]

1. First off, prepare “Pate sucre”  Slice butter as you measure.

2. Leave at room temperature until it gets soft.

3. When it turns as almost soft as hair wax, you can then start beating.

4. Keep beating until it becomes airy and turns light yellow.

Airy butter can make pie with light texture.

5. Add icing sugar.

Icing sugar is suitable for this type of dough. It blends very easily.

6. Mix well until all the icing sugar particle disappears.

7. Add salt.

8. Before adding an egg into the butter, make sure your egg is not chilly. if your egg has just come out from the fridge, you can bath the egg in warm water.

If you add cold egg into the butter mixture, it gets lumpy very easily.

9. Once your egg has become room temperature you can crack it and mix well.

10. Make sure to add little bit at the time.
Add about one third of the egg and mix well and then add another one third, mix it and so on.

11. Make sure the egg blends in the butter completely before adding more egg each time.

12. Sift in cake flour.

13. You can use a rubber spatula to mix in..

14. Mix until butter and flour get cooperated.

15. With this recipe, you can make two of 23cm round shape pie.
Divide into two portions.

16. Wrap them tightly, store in the fridge.

17. this time I’m using only one portion, I put the other one in a Ziploc and put in the freezer.

you can store in the freezer for 2 to 3 weeks.

18. while resting your dough in the fridge, you can prepare a custard sauce.

19. when the custard cream sauce is ready, you can spread on a shallow tray and cool off.

20. while cooling down, this type of sauce can get dry on the surface very easily. To prevent that, you can apply some butter.

21. You don’t have to apply too much, all you need is a very thin layer of oil. So,, go easy on buttering..

22. When your dough gets nice and solid, you can take out from the fridge.
This time I decided to make two small pies so I decided to cut into two pieces.

you can either make two small pies or one large pie.

23. put the dough into a plastic bag and form into a round shape.

24. Because you are going to press into a thin sheet, make sure to position your dough into the center of the bag.

25. Now you can use a rolling pin to roll your dough.

if you don’t have a rolling pin, you can use an empty bottle instead.

26. Great thing about rolling in a plastic bag is, you don’t need to bother dusting flour on your working table. It just doesn’t stick at all and works very smoothly and clean!

27. I rolled out about 18 cm. You can now store in the fridge.
Do the same to the other portion of the dough.

28. Now you have two sheets of pie ready, you can keep them both in the fridge for now. Let’s prepare other materials!!

29. This time I attached a 1 cm tip to a icing back.

30. To prevent custard sauce from leaking, you can twist the bag and tuck into the tip.

31. Transfer the custard sauce into the bag.

32. Now you are ready to fill your pie with custard sauce!

33. Have two baking sheets ready.

34. Remove one side of the plastic bag.

35. Place the pie sheet with the plastic bag facing up and then peel off the bag.

36. Squeeze out the custard sauce in circular motion, make sure to leave some margin.

37. Fold the edge of pie sheet inward as you are forming pleats.

38. This fling doesn’t get runny while baking, so.. not to worry, if you have any parts not folding in very well.

39. Twist the both ends of the baking sheet so the pie sheet can be fixed.

40. Do the same process to the other one. Place them on a baking tray. Put into 180Celsius degrees preheated oven. Bake for 18 to 20 minutes.

The baking temperature and time may be varied depending on your oven.
If you would like to use apples or pears as a topping, you can slice it and then lay them on the custard sauce and bake!

41. Just make sure the crust is thoroughly baked and golden brown.

42. Lastly, you can top off with your favorite fruits!
Slice strawberries.

You can use any kinds of fruits as a topping such as orange, kiwi, they are all suitable. if you are using banana, make sure after slicing toss with some lemon juice so it won’t change its color.

43. and lay them nicely on the top. You can sprinkle some icing sugar before serving.

This pie can be served as hot or cold. either way, it’s very enjoyable!

    I like the way to roll out the pastry, will try that.
    Here in the UK strawberry season won’t start for another month yet, all the ones in the shop now are imported.
