Soup recipe-Kabocha Curry Creamed Potage


Here’s another Kabocha recipe! This time, I’m introducing a warm and soothing soup recipe! Some people, mostly kids may not like squash dish very much,, But if you add some curry to cover up some squash-flavor, and add some creamed corn, it transform into very taste full dish! You can either serve with bread or add some short pasta. I’m pretty sure kids will like it!! ( ´ ▽ ` )ノ

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves two ~
6 Sausages
250g Kabocha/Squash
1/2 Onion
5~6 stalks Asparagus
100g Maitake mushrooms
5~6 leaves Cabbage
1 Red bell pepper
200ml Water
200g Creamed corn
200ml Milk
2 tbs Curry powder
3 tbs Parmesan cheese
Salt&Pepper to taste

 

[ Directions ]

1-
1. Peel and remove the seeds from a kabocha and slice.

2. Put sliced kabocha into a steamer or microwave. Heat until soft.

3. Cut Maitake mushrooms into small piece.

If Maitake is not available, you can use any other kind of mushrooms!

4. Cut cabbage into small piece

5. Slice red bell pepper.

6. Cut asparagus into shot pieces

7. Cut sausages into small pieces.

8. Chop onion.

9. Place a pot over medium heat add some oil. Put the chopped onion and stir fry it until translucent.

10. Add Mushrooms and some butter. Stir fry until it gets aromatic.

11. Add the cabbage, stir fry until soft.

12. Add curry, stir fry for a minute or so..

You can change the amount of curry to your preference.

13. Pour in some water. Bring it to a boil and then turn to low heat, keep simmering.

14. In a large bowl, smash the kabocha.

You don’t need to smash until very fine. Leaving some chunks gives much better texture!

15. Add creamed corn.

16. Mix well…

17. Add kabocha mixture into the pot.

18. Add some milk.

19. Add other ingredients including the red bell pepper, asparagus, sausages.

Basically, you can add any ingredients into this soup. You just to see when to put into a pot depending on the material itself… If adding leaves or peppers which cook quickly, you can add here on step 19. If you are adding root ingredients such as carrot, you may want to stir fry with onion.

20. Finally, add some parmesan cheese.
You can serve it with some bread and dip into the soup~!!
