Seafood recipe-Grilled Snapper with Yogurt Tartar Sauce


I love eating white meat fish with lots of tartar sauce. Fish and chips is one of my favorites. The problem with this type of food is that it contains so much oil. Thick batter goes in deep fry oil, mayonnaise, what makes this food so yummy also makes you gain some weight… This time I decided to go much lighter way to enjoy white meat fish. Using a grill pan can make nicely caramelized surface which produces nice aroma especially when coated with some herbs! And to make lower cal tartar sauce, I combined with yogurt. It’s still rich and creamy. Dipping as much as you want still doesn’t make you feel guilty at all!!

[ Ingredients ] *tsp=tea spoon tbs=table spoon
~ serves two ~
2 Snapper, fillet
1/2 tsp Mixed herbs
Salt and Pepper to taste
1 Hard boiled egg
1/4 Red onion
1/2 Avocado
1+1/2 Mayonnaise
2 tbs Yogurt
Salt and Pepper to taste
8 Slices Squash
10 Mini tomatoes

[ Directions ]

1. Unshell a boiled egg and cut into small pieces.

I usually start cooking eggs with the water directly from the tap, not directly adding into boiling water. After adding water, turn on the stove slowly bring it to the boil. This way you can avoid cracking shell and leaking egg white while cooking. Cook for about 10 minutes and cool off under running water.

2. Chop until fine.

You can also use a musher to crush an egg.

3. Chop red onion.
POINT-ENG

You can use white onion instead.

4. Soak in a bowl of water for about 5 minutes.

Soaking water can remove onion’s sharpness

5. Dice avocado.

6. Wrap the red onion with cheese cloth or paper towel and squeeze out the excess water.

7. Add Mayonnaise and yogurt in a bowl.

Combining with yogurt can reduce the amount of mayo. and can make low cal tartar sauce!

8. Add the avocado and onion into the bowl

you can add some chopped tomato for color.

9. Add salt and pepper to adjust the flavor.

10. Cut filleted snapper into 2~3pieces

You can use any other white meat fish such as black cod, halibut or even salmon!

11. Sprinkle some salt, pepper and dried mixed herb on the both side.

12. Slice squash about 0.5cm thin.

13. Heat up a grill pan on medium high heat. place the fish, squash and mini tomatoes.

14. As soon as see the grilled pattern, you can turn over and continue cooking the other side on low heat until done.

15. when you start seeing clear juice on the surface of fish, it’s done. You can then shut off the stove and decorate on your plate.
