Bento recipe, Japanese food-Kara-age & sushi Bento + Sweet potato cupcake


Summer has come! any plans for vacation?
I have a great Bento-recipe! including everyone’s favorite Sushi roll and chicken kara-age! This may be a little time consuming to complete the whole meal. but it’s defiantly worth trying! Why don’t you make one and take your family or friends out for picnic!

[ Ingredients ]
【Dynamite/Deep Fried Prawns Roll】
~ serves 2-4 ~
[4rolls]
400g Steamed rice
2 tbs Sushi vinegar
2 sheets Seaweed/Nori
8 Prawns
8 stalks Asparaguses
80g Cake flour
1 tsp Baking powder
1 Egg
100ml Ice water
50ml Japanese vodka
*regular vodka can be substituted

2 tsp Mayonnaise
1/2 White sesame

【Chicken Kara-age】
7~8 Chicken drumsticks
[Marinate sauce]
2.5 tbs Soy sauce
1 tsp Mirin
1/2 tsp Lemon juice
1/4 tsp Garlic paste
1/4 tsp Ginger pate

2 tbs Sake
1 Egg
1/2 cup Potato starch

【Steamed Sweet Potato Cup cake】
90g Sweet potato, steamed
50g Sweet potato, steamed and diced
100g Pancake mix
1 Egg
*50~70ml Milk
*amount should be adjusted depending on your potato
1/4 tsp Black sesame

[ Directions ]

【Dynamite/Deep Fried Prawns Roll】

1. Prepare ice water.
POINT-ENG

using chilly water can prevent from producing lots of gluten activity when mixed with flour. <-this gluten makes the tempra crust chewy rather than crispy…(~_~;)

2. Add sho-cyu/Japanese vodka into the ice water.
POINT-ENG

*adding distilled liquor can help water evaporate quickly when deep frying. at the result, you can have nice crispy texture!
*you can use regular vodka instead.

3. crack an egg into step2. and mix well.

4. mix dry material,cake flour and baking powder, before hand and pour in step 3.

5. lightly mix the batter with chop sticks.
POINT-ENG

*do not use a whisk. over mixing can create gooey texture.
Don’t worry about  leaving lots of lumps. this can give you crispy texture!!

6. peel the prawns and devein. for each prawn, make diagonal slits under the belly.

7. and snap the tendon  to loosen the meat.
POINT-ENG

*using this method you can prevent the prawns from curling when deep fried.

8. trim off the end of the tail and scrape out the water inside.
POINT-ENG

*if you skip this process, prawns may easily burst in the hot oil!

9. heat up the oil to 175~180 Celsius.
POINT-ENG

*if you don’t have a thermometer, you can check the temperature by dropping some batter. If the batter sink half way and float on the surface coming out of fine bubbles, it’s reached proper temperature.

10. dip each prawn into the batter and gently place into heated oil.

11. remove from the oil when it’s turned into golden brawn.

12. scoop out the flakes while you are deep frying each prawn.

*do not dump this yummy flakes ! you’ll be using this on later step.

13. While steamed rice is warm, add Sushi vinegar.
POINT-ENG

*it absorbs much quicker when rice is warm.

14. Mix well,,

15. Lay a sheet of half-sized nori on wrap film.
Place small amount of Sushi rice on the surface separately.
POINT-ENG

*leave about 1cm end uncovered for sealing.
*keep the rice layer thin. otherwise you end up with a big fat Sushi Roll!!

16. Spread the rice evenly and sprinkle flakes on the surface.
POINT-ENG

If you have extra flakes left, save it for other use. Sprinkle on your soba,udon,chazuke or even instant noodles, it makes your meal soooo wonderful!!! o(≧▽≦)o

17. Lay another sheet of wrap film on the top. Press gently to make flat surface.

18. Turn over and remove the wrap film on the top.

19. place blanched asparagus, deep fried prawns and squeeze some mayonnaise.

20. Roll in the fillings by holding the wrap film end.

21. With wrap film on cut into small pieces.

*Wiping off the knife on each cutting can make clean section appear.

【Chicken Kara-age】
22.  Prepare the marinate sauce.

23. This time I’m using chicken drum sticks to make “tulip shape” kara-age!

24.  Cut the chicken skin around the joint.

25. Separate from the bone.

26. Roll inside out to expose the bone.

27. Here! now you’ve got “tulip shape” kara-age!

28. Marinate the chicken for 10 minutes or so..

29. After 10 minutes all the seasonings are absorbed. You can add Sake to give moisture.

30. Dip the chicken into beaten egg.

31. Dredge with corn starch.
POINT-ENG

*make sure to cover all around the meat. otherwise it gets darken so quickly while deep frying…

32. Deep fry at 175 Celsius for 2 minutes or so.
After frying, place on the wrack and use residual heat to  keep cooking through inside.

*using this method, you can avoid over-cooking. and make very succulent kara-age!

33. Wrap the bottom part with tinfoil.

【Steamed Sweet Potato Cup cake】
34. Peel the steamed sweet potatoes while hot. Save about 50g of sweet potato unpeeled for dicing.
POINT-ENG

*Using paper towel can avoid from burning your hand…

35. Mash the sweet potatoes with masher or roller pin.

36. Add milk

37. Mix well
POINT-ENG

*the milk amount should be adjusted depending on each potato moisture content.

38. Pancake mix, you can use whatever the brand you like.

39. Add one egg into measured pancake mix.

40. Mix well.

41. Add mashed sweet potato and mix well.
POINT-ENG

*If your mixture is too stiff, you can add some milk to loosen up.

42. Dice the unpeeled steamed sweet potato.

43. Put step41. into silicon cups

44. Add 4~5 diced sweet potato and sprinkle some black sesame.

45. Put into a steamer. cook for 10 minutes.

*Make sure your steamer is preheated before cooking cake.

 
POINT-ENG

*this type of food can be enjoyed at either hot or room temperature.
to avoid your lovely bento becomes stale at lunch time, make sure all the food is cooled down before packing in the morning. Keeping tepid inside bento and leaving for hours(until lunch time) can produce lots of bacteria!
if you want to have warm bento, use microwavable bento box and reheat it before eating.
