Japanese food recipe-Okonomi Style Soba & Rice Pancake


Okonmomi-yaki is savory pan cake mixed with lots of cabbage. But this time I’m introducing a little defferent type of pancake. It comes in rice and soy sauce seasoned Yaki-soba filling. It’s more like half omelet type. I believe this is much easier to prepare. Besides, it cooks much faster. If you happen to have some steamed rice left over, this recipe may be suitable!

[ Ingredients ]
~serves one~
100g Shang-hai noodles
1/2 tablespoon Soba tsuyu sauce
1/2 tablespoon Tonkatsu or Worcester sauce
100g Steamed rice
1 egg
1stalk green onion
1/2 tablespoon Soba tsuyu sauce
1/2 tablespoon Tonkatsu or Worcester sauce
1/2 teaspoon mayonnaise
1/4 teaspoon seaweed powder

[ Directions ]

1. This noodles commonly called “Shang hai noodles” you can buy at most of Asian grocery store.

2. cut the noodles into short length.

3. Chop green onion

4. Heat up a fry pan on medium heat. after oiling, add noodles and stir fry until light golden brown.

5. Add soba tusyu(1/2 tablespoon) stir it well.
POINT-ENG

*Q. what’s soba tsuyu?
A. The tsuyu is made of a strong mixture of dashi(fish broth)and sweetened soy sauce.
usually use it as soba dipping sauce or udon soup.

6. Add Tonkatsu or sauce or Worcester sauce(1/2 tablespoon)

7. Make sure the noodles are all mixed well with the sauce.

8. Dump the noodles into a bowl.

9. Add steamed rice, chopped green onion and an egg.

10. Add another 1/2 tablespoon soba tsuyu sauce and mix well.

11. Heat up a non-stick fry pan on low heat. After oiling, add the mixture(step 10)

12. Form the mixture into round shape with wooden spatula. Keep frying until bottom gets golden brown.

13. To flip this, you can simply use spatula to do so. If you have trouble flipping a large pancake, you can use this method! First let it slide out and move onto a plate.

*Make sure the bottom part of rice pancake is already setting and holding all the ingredients.

14. Hold the plate on your hand and then with the other hand, cover a plate with the pan.

15. Flip the frying pan and plate together.
POINT-ENG

*Please be careful! the fry pan may be still hot!!

16. Take out the plate with tongs.

17. Turn on low heat, keep frying until egg completely sets.

18. Transfer the rice pancake to a cutting board. Cut into 4 or 6 slices.

19. place the pan cake on a plate and spread Tonkatsu or Worcester sauce with a spoon.

20. To make attractive mayonnaise decoration, you can use this easy method to make a instant pastry bag!
squeeze out a little amount of mayonnaise in the middle of a sheet of wrap film.

21. Twist the wrap tightly.

22. Puncture the bottom part of the wrap with toothpick or skewer.

23. Squeeze out and see if it comes out smoothly. adjust the hole size if needed.

24. Squeeze on the pancake.
POINT-ENG

* To make nice and straight lines, you want to move your hand rapidly as you squeeze to let mayonnaise spread evenly.

25. If you have, you can sprinkle a pinch of seaweed powder or white sesame.
